Creamy Parmesan Orzo With Chicken And Asparagus

Quick and delicious Creamy Parmesan Orzo with Chicken and Asparagus that can be on your dinner table in only 30 minutes! Cheesy, creamy, delicious goodness!



This creamy, cheesy, Parmesan orzo is my kind of dish and the kind of dish I could have every single night for lunch or dinner. What’s not to like? You’ve got your proteins, your veggies, and my favorite part, the Parmesan orzo.

But you know what’s great about this Parmesan orzo? Is how easy it is to make and how quick. Orzo takes only about 10 minutes to cook! And yes, orzo is a pasta, not rice as some may think. But this dish could be made with rice as well, it will just take a little bit longer to cook.

Orzo is perfect for when you want a quick dinner, or a quick side dish and don’t want to spend a lot of time in the kitchen, because who does? As much as I love cooking, I still always look for quick and easy meals. Baking on the other hand, is a different story which I’ll leave for another time.






Creamy Parmesan Orzo With Chicken And Asparagus

Ingredients

  • 1 lb chicken breast boneless and skinless (about 3)
  • 1/2 tsp salt or to taste
  • 1/2 tsp pepper or to taste
  • 1 tbsp paprika
  • 2 tbsp olive oil
  • 1 cup asparagus chopped
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 cups orzo uncooked
  • 2 cups half and half
  • 3 cups chicken broth low sodium, or water
  • 1 1/2 cups Parmesan cheese grated
  • 2 tbsp parsley chopped, for garnish

Caramel Apple Crisp Cheesecake Bars

Ingredients

Grǎhǎm/Oǎts Crust:

  • 1/4 cup brown sugǎr
  • 1 cup grǎhǎm crǎcker crumbs
  • 3/4 cup rolled oǎts
  • 1/2 cup melted butter, plus more for greǎsing the plǎte

Cheesecǎke Lǎyer :

  • 2 8oz pǎckǎge softened creǎm cheese
  • 2 tbsp corn stǎrch
  • 1/4 cup brown sugǎr
  • 1/4 cup white sugǎr
  • 1/2 tsp ginger
  • 2 tsp vǎnillǎ extrǎct
  • 1/2 tsp cinnǎmon

ǎpple Crisp Topping:

  • 1/4 cup ǎll purpose flour
  • 1/4 cup rolled oǎts
  • 1/4 cup brown sugǎr
  • 1/2 tsp cinnǎmon
  • 2 tbsp coconut oil
  • 2 medium to lǎrge ǎpple, peeled ǎnd thinly sliced
  • Cǎrǎmel Topping

Instructions


  1. Preheǎt your oven to 350F.
  2. Prepǎre one 9x13-inch glǎss pǎn by greǎsing thoroughly with butter or bǎking sprǎy,
  3. or light-colored metǎl bǎking pǎn with foil,
  4. (be sure to cover the sides, you ǎre going to use this to lift the bǎrs).
  5. In ǎ mixing bowl combine grǎhǎm crǎcker crumbs, rolled oǎts, melted butter ǎnd brown sugǎr together.
  6. Press inside the bottom of ǎ 9x13-inch bǎking pǎn.
  7. Bǎke for 5 minutes. Remove from oven to cool.
  8. Meǎnwhile in the bowl of your electric mixer blend together creǎm cheese, brown sugǎr, white sugǎr, cinnǎmon, ginger, cornstǎrch ǎnd vǎnillǎ.
  9. Once well combined, pour on top of your grǎhǎm crǎcker/oǎt crust.

Meal Prep - Teriyaki Chicken and Broccoli

Quick teriyaki chicken and broccoli meal prep bowls make a tasty healthy lunch for the entire work week in under 20 minutes.



This meal-prep version of teriyaki chicken is perfect for lunch time. It will satisfy the need for take-out without the extra calories. The chicken is not too sweet or to salt and covered in a sticky teriyaki glaze. We like to add broccoli for extra crunch and fiber but the chicken is also great alone!


The dish comes together in under 20 minutes and makes 4-5 days of lunch. Prepare these meal prep dishes on Sunday or after work, and enjoy an entire weeks worth of delicious lunch.


To begin, simply chop chicken breasts into small cubes and saute in a pan. Next, add my simple teriyaki sauce to the chicken and stir until the sauce is thick and glossy. At this point, feel free to add broccoli, bell pepper, onion, or any of your favorite veggies to the pan. Saute until the veggies are soft and your pretty much done!




Meal Prep - Teriyaki Chicken and Broccoli

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • salt and pepper
  • 1 tablespoon oil
  • 2 cups broccoli florets
  • 1 bell pepper sliced into strips
  • sesame seeds for garnish optional
  • 2 cups cooked brown rice
  • 4 meal prep containers
For the teriyaki sauce:
  • 1/4 cup light soy sauce or 2 tablespoons dark soy
  • 2 tablespoons honey
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon cornstarch
  • 1 clove garlic peeled and minced
  • 1/2 teaspoon sesame oil optional
  • 1/4 teaspoon ground ginger optional

Chicken Thighs with Creamy Bacon Mushroom Thyme Sauce

Chicken Thighs with Creamy Bacon Mushroom Thyme Sauce – this is one of the best chicken thigh recipes I ever made. Easy, delicious, and perfect for bone-in, skin-on chicken thighs! This is KETO friendly, high-fat, low-carb, gluten free chicken recipe.


Chicken thighs are baked to perfection and then complemented with flavorful creamy mushroom and bacon sauce with lots of fresh thyme. Pure comfort food – chicken dark meat is always delicious in a creamy sauce!






Chicken Thighs with Creamy Bacon Mushroom Thyme Sauce

Ingredients

Chicken thighs
  • 4 chicken thighs , skin-on, bone-in
  • 1 tablespoon vegetable oil
  • salt and pepper
  • 1 teaspoon Italian seasoning dried thyme, oregano
Mushroom sauce
  • 6 oz white mushrooms
  • 5 slices bacon cooked, chopped
  • 1 cup heavy cream
  • 1/8 teaspoon salt
  • 5 sprigs fresh thyme
Takes , serves 4.

Instructions

  1. Preheat oven to 350 F.
  2. Season both sides of chicken thighs generously with salt and pepper and Italian herb seasoning mix (usually a combination of dried thyme, oregano and other herbs). Heat vegetable oil on medium-high heat in a large skillet. Add chicken thighs skin-side down. Cook for about 5 minutes, on the skin side until nicely browned.
  3. Transfer chicken thighs, skin side up, to the foil-lined baking sheet and bake at 350 F for about 20 minutes or until chicken thighs are completely cooked through and no longer pink in the center.
  4. In the mean time, make the mushrooms sauce:
  5. Heat vegetable oil in a large skillet on medium heat. Add sliced mushrooms (without salting - to ensure the mushrooms get caramelized) and cook on medium heat for about 3 minutes flipping once.
  6. Add chopped cooked bacon to the skillet.
  7. Add heavy creamy, 1/8 teaspoon salt and snipped fresh thyme, bring to boil, stir, immediately reduce to simmer and simmer for about 2 minutes on very low heat for flavors to blend and sauce to reduce a bit. Taste and add more salt if needed.
  8. When chicken is done baking and chicken thighs are completely cooked through, add cooked chicken thighs to the skillet and spoon the sauce and the mushrooms on top of chicken thighs.

Cilantro Lime Grilled Chicken with Strawberry Salsa

 

Tasty cilantro lime grilled chicken topped with a fresh, summery strawberry salsa.

Please raise your hand if you saw this coming!  Although the strawberry salsa and the cilantro lime grilled chicken that I recently shared are amazing by themselves, they are even better together! It’s really hard to beat a quick and easy meal consisting of a tasty grilled meat topped with a fresh fruit salsa and this one just screams summer! If you marinate the chicken and make the salsa the night before all you really need to do is head outside into the sunshine, fire up the grill and cook the chicken for a no fuss and no mess meal in the great outdoors, or just in your back yard, or on a balcony as the case may be. If you are looking for a nice way to celebrate the arrival of summer you can’t go wrong with this cilantro lime grilled chicken with strawberry salsa!






Cilantro Lime Grilled Chicken with Strawberry Salsa

Ingredients

    For the strawberry salsa:
    • 1 pound strawberries, diced (~2 cups)
    • 1/4 cup red or green onion, finely diced or sliced
    • 1 jalapeno, finely diced
    • 1 lime, juice and zest
    • 2 tablespoons cilantro, chopped
    • salt to taste
    For the cilantro lime grilled chicken:
    • 1 pound boneless and skinless chicken breasts
    • 2 limes, juice and zest or 1/4 cup lime juice
    • 1 tablespoon oil
    • 2 tablespoons cilantro, chopped
    • 1 clove garlic, grated
    • 1 jalapeno, finely diced (optional)
    • salt and pepper to taste
